Vanilla Pumpkin YUM!

I host our annual Friendsgiving celebration every year and since a majority of my friends are misplaced Michiganders like myself, watching the Detroit Lions game is a tradition we don’t miss. Being on the West Coast means kickoff is at 9am so we start the day with breakfast and mimosas.

This is the EASIEST and oh-so-tasty holiday recipe you’ll find! Vanilla Pumpkin muffins are perfect for Thanksgiving morning and only needs TWO ingredients. Pick up some pumpkin pie filling and a box of French Vanilla cake mix. (You could also try different cake flavors if you’re feeling adventurous!)

Mix both ingredients into a medium size bowl. You’ll think it needs water, eggs, or oil. DON’T do it! You could, however, add chocolate chips which is what I did.


Blend the two using a mixer or simply a wire whisk. (I don’t even own a mixer since I only cook once a year. Eek!) Place paper linings into your muffin tin and fill each cup nearly to the top. Stick in the oven that’s preheated to 400 degrees for 15 minutes and you’re done. It’s as simple as that!

The Vanilla Pumpkin muffins took me 5-10 minutes to prep and are ready to go for Thanksgiving morning. I might throw a dash of powdered sugar on them but honestly, they’re great as is!

(1) French Vanilla Cake Mix

Preheat oven to 400 degrees. In a medium bowl, mix the ingredients. Line muffin tray and fill with mixture nearly to the top. Bake for 15 minutes. Let cool before serving.


  1. We do this but bake it as a cake, poke holes in the baked cake and pour sweetened condensed milk over it and refrigerate. After it is cooled use whip cream for frosting, sprinkle with heath bits, and drizzle with caramel. YUM!
